'COOK WITH COCO' - VEGAN SCRAMBLED EGGS
Updated: Oct 1, 2020

Thats riiiiight I'm back with another 'Cook with Coco'! This week I am showing you how to make one of my favourite vegan recipes - scrambled eggs!
Yep thats right, you can make "vegan egg" using tofu and scramble it just like you would with normal egg and even re-create that "eggy" flavour.
I even wrote a blog post a little while back about how to make these eggs, and how this recipe's star ingredient 'black salt' can give it the "eggy-ness" that many vegans love and miss. You can check that post out here.

Despite what you may think, this recipe is suuuuper easy, and you can customise it with any sides and toppings that you wish!
Cook with me! (This recipe makes enough 'scrambled eggs' for 2 people)
You will need:
Your choice of bread
Himalayan pink salt
Himalayan black salt ("kala namak")
Plant-based butter/spread
Olive oil
1 block of firm or extra-firm tofu
Spinach (optional)
Vegan cream cheese (optional)
Sriracha sauce (optional)
