It's that time again!! Episode 3 of 'Cook with Coco' is now live over on Flex FM's Instagram (@flexfmuk) and this time I had something sweet for you - 'Vegan Pancakes'!!
I LOVE pancakes, and since I have been vegan I've experimented loads to find the perfect, fluffy pancake recipe. These will taste exactly like any of your favourite pancakes...if not better!
This recipe is super quick and easy, and you can customise it with any toppings you wish!
I decided to go for Biscoff's Lotus spread, (if you haven't tried this before then watch the video and thank me later) banana, and a mixture of seeds sprinkled on top.
Cook with me! (This recipe made 4 medium sized pancakes)
You will need:
300g self-raising flour
1 tsp baking powder
1 tbsp sugar (any kind)
1 tbsp vanilla extract
400ml plant-based milk (such as oat, almond or soya)
1 tbsp vegetable oil for cooking
Toppings of your choice (I used Biscoff Lotus spread, banana, chia seeds with ground blueberries, ground flaxseed and goji berries, and shelled hemp)
